  蛇葡萄素(Ampelopsin)又名雙氫楊梅素(dihydromyricetin,DMY)是藤茶中一種重要的黃酮類物質(zhì)。研究表明,Ampelopsin具有廣泛的生物學功能:抗炎、抗氧化、抗腫瘤、保肝、改善運動疲勞等。本書首從Ampelopsin的結(jié)構(gòu)入手,然后分章節(jié)來探討Ampelopsin的抗炎、抗氧化、抗腫瘤、保肝、神經(jīng)保護、改善運動疲勞及衰老性肌萎縮的作用;闡明Ampelopsin發(fā)揮上述作用的信號分子或者靶標;Ampelopsin發(fā)展成為功能性食品的前景。
